Ávila, Spain is home to Ornua’s latest state-of-the-art cheese production facility. The result of a €30 million investment, the 35,000-tonne processing plant has significantly increased Ornua’s pizza cheese making capacity and capabilities. The new facility is enabling Ornua to lead the way in delivering quality, innovation and bespoke customer service to both European and global pizza chains.
The Ávila facility employs 120 staff and features large scale, fully automated production lines; innovative Individual Quick-Freezing capability; and leading-edge cheese processing and grating technology. The facility incorporates the latest technology to produce pizza cheese ropes and flavoured cheese ropes and string cheese for the growing ‘stuffed crust’ sector of the market.
Ornua Ingredients Europe’s Ávila processing facility has both the necessary scale and state-of-the-art capabilities to produce a comprehensive range of bespoke pizza cheese blends and formats to meet the growing needs of a global market which is now worth $130 billion.
Avila – Part of Ornua Ingredients Europe
The Ávila facility is a key part of Ornua Ingredients Europe, a new business unit established by Ornua to be a leading supplier of innovative, high quality and nutritious cheese and dairy powder ingredients to leading food manufacturing, food service and QSR customers. Incorporating Ornua Ingredientes Europa, Ávila and Ornua’s UK ingredients businesses, it has a turnover in excess of €300 million; four well-invested processing and NPD facilities and 600 experienced and committed staff. Headquartered at its Nantwich UK facility, Ornua Ingredients Europe has the scale and resources, combined with the agility and flexibility, to identify and meet the ever-changing needs of its customers and their consumers.
Ávila is also the location of Ornua’s latest R&D Centre of Excellence, one of nine now established both in Ireland and across the globe to boost further its innovation know-how and ensure that it stays at the fore front of the rapidly changing dairy ingredients market.
The new Centre of Excellence at Ávila features a pilot plant, innovation kitchen and presentation suite dedicated to developing the next generation of pizza cheese and cheese ingredients across a variety of applications and formats. It is designed to create an environment in which Ornua’s dedicated R&D team can work with customers to innovate and undertake NPD in a hands-on and collaborative manner.

Grated Cheese Blends & Formats
Ávila’s range of grated blends and formats allows customers to specify, not just the particular blend of cheese required, but customised formats too. Cheese ropes & string cheese
Ávila has the capability to produce the latest in cheese ropes, flavoured cheese ropes and string cheese ideal for the creation of stuﬀed crust pizzas, ﬂatbreads, snacks, savouries and other hot-eat applications. Made from a stretched curd cheese providing a rich, creamy ﬂavour and excellent texture each piece is carefully proportioned and individually quick-frozen for ease of use.
Long, thin and ﬂexible, Ornua’s controlled melt technology is able to precisely tailor the functionality of the cheese to the end application, for example to ﬁll the rolled crust of stuﬀed pizzas even after baking.Download Product Brochure
The processed cheese range made at Ávila can deliver bespoke solutions, with speciﬁc functional properties that meet each customer’s application or cooking method needs. Speciﬁc functionality can be ‘dialled in’ to create the desired ﬂavour, colour, ﬁrmness, meltability and stretch.
